very tasty and easier to snack on than the classic apple pie
First, for the apple pie muffins, knead the flour, sugar, salt, one egg, and butter together to form a nice dough. Roll out thinly on a floured surface. Now butter and flour a muffin tin. Cut out 12 circles from the dough, about 1-2 cm larger than the top diameter of your muffin tin. Set the remaining dough aside for decoration. Press the circles into the holes to create small bowls. Peel and core the apples, and cut into small cubes. Mix with the sugar, cinnamon, flour, and butter. Now, using a spoon, fill the apple mixture into the holes. They can be a little fuller. Roll out the remaining dough again and either cut out decorations or cut into strips with a pastry wheel. Place on top of the apple mixture. Bake in a preheated oven at 200°C for about 15-20 minutes. The apple pie muffin batter should be golden brown and the apple mixture should still be bubbling slightly. It’s best to let the apple pie muffins cool in the pan. This will make the batter nice and crispy, and the muffins will be easy to remove with a spoon. If the muffins are still too hot, they’ll break when removed.
