Apple pie quick and easy

Ingredients for 1 servings:

  • 5 m.-sized eggs
  • 250 sugar
  • 2 bags of vanilla sugar
  • 250 butter or margarine, melted
  • 1 pinch of salt
  • 1 packet of baking powder
  • 350 g flour
  • 1 pinch of cinnamon
  • some lemon juice
  • 6 large apples
  • 1 handful of raisins, soaked in rum
  • 2 tbsp powdered sugar
  • Fat, for the tray
  • Flour, for the baking sheet

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Whisk the eggs with the sugar, vanilla sugar, and salt until frothy. Add the cinnamon and lemon juice. Combine the baking powder and flour, then stir into the egg and sugar mixture. Stir in the melted butter. Peel and core the apples, cut into large pieces, and fold in with the rum raisins. Place the batter on a greased and floured baking sheet and bake at 175°C (350°F) for about 40-45 minutes using top/bottom heat. Once cooled, dust with powdered sugar.
