The best and quickest apple pie I’ve ever eaten!
Knead 250g flour, 100g sugar, and 190g butter into crumbles and chill. Peel, core, quarter, and slice the apples. Drizzle with lemon juice. Beat 200g butter and 175g sugar for 8 minutes using the whisk attachment of a hand mixer until creamy (sounds unnecessary, but that’s exactly what makes the cake so delicious). Beat in the eggs, one at a time, for 30 seconds each. Mix together 250g flour, custard powder, and baking powder, and stir in alternately with the orange juice. Spread the batter onto a greased or parchment-lined baking sheet (40 x 30cm) and top with the apple slices. Spread the crumble over the batter. Bake in a preheated oven at 175°C (160°C fan/convection oven) on the second rack from the bottom for 35-40 minutes. Let cool and, if desired, dust with powdered sugar. This recipe also tastes great using plums and caramel pudding powder instead of vanilla pudding powder.
