Ingredients for 4 servings:
- 250 g flour
- ½ cube of yeast
- 1 egg(s)
- 40 g sugar
- 50 g butter
- 125 ml milk
- 2 apples, sweet or other fruit
- 1 packet of pudding powder (vanilla flavor)
- 2 tbsp sugar
- 500 ml milk
- 120 g butter
- 120 g flour
- 100 g sugar
- 3 packets of vanilla sugar or vanilla
- Fat for the mold
- possibly raisins
- possibly cinnamon
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
on yeast dough base
For the yeast dough, warm 125 ml of milk (finger temperature), stir in 40 g sugar and 1/2 cube of yeast. Weigh out 250 g flour, 1 egg and 50 g butter. Pour the sugar, yeast and milk into the dough. Knead with a dough hook or by hand until the dough is smooth. If necessary, add flour (if the dough is too sticky) or milk (if the dough is too dry) to adjust the consistency. Grease a springform pan or a quiche pan (round pan with raised edges) or line it with baking paper. Roll out the dough and place it in the pan. Press upwards along the edges of the pan and trim off any excess dough. Prick the base of the dough several times with a fork. Cover the pan with a well-moistened towel and let it rise in a warm place (yes, I let the dough rise directly in the pan. This saves a lot of time and later on, it doesn’t have to flatten it when rolling it out). For the crumble, mix 120g flour, 120g butter, 100g sugar, and 3 packets of vanilla sugar with a hand mixer. If necessary, add flour (if the crumble is too sticky) or butter (too dry) to adjust the consistency. Refrigerate. Peel and core 2-3 sweet apples, and cut them into either thin slices or small pieces. If preparing the crumble and apples didn’t take at least 30 minutes, wait to add the topping and make the pudding so that the batter has enough time to rise before topping with the apples. Make a pudding from the pudding mix, 2 tablespoons of sugar, and 500ml milk according to the package instructions. After the pudding is cooked, arrange the apple pieces on the cake base. If you want to create a visual masterpiece with apple slices, make the pudding after distributing the apples. Using a small ladle, spread the pudding over the apples, starting in the center. Remove the crumble from the refrigerator and briefly (!) mix again with a hand mixer so that the crumble spreads evenly over the pudding. Bake at 175°C (fan oven) for about 35-40 minutes (depending on the desired brownness). Instead of vanilla sugar, you can also use a smaller amount of real vanilla. Depending on your taste, you can also sprinkle some raisins or cinnamon on the apples before adding them to the pudding. If you don’t like apples, you can use other fruit, such as plums, or even omit the fruit altogether.
