Ingredients for 1 servings:

  • 150 g spelt flour
  • 100 g margarine
  • 50 g maple syrup
  • 3 apples (organic)
  • 1 vanilla pod(s)
  • ⅛ liter of water
  • 3 tbsp cornstarch
  • 2 tbsp maple syrup to dissolve the cornstarch
  • 2 tbsp water to dissolve the cornstarch
  • some peas, dried for blind baking
  • Oil for the mold
  • Flour for the mold
  • n. B. Fruit for garnishing

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

Children’s cake for baby’s 1st birthday. For a 24 cm springform pan.

Combine flour, margarine, and maple syrup in a bowl and knead with the dough hook of a mixer until you have a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for about 30 minutes. Grease and flour a 24 cm tart pan. Spread about 2/3 of the dough onto the tart base, then use the remaining third to form a thin border along the side of the tart pan. Prick the base of the dough several times with a fork and cover with the dried peas. Bake in the oven at 200°C for about 20 minutes. Then empty the peas and let the tart base cool slightly. In the meantime, peel, core, and finely dice the apples. Simmer with 1/8 l water and the vanilla bean pulp until the apples are firm to the bite. Mix the cornstarch with the maple syrup and a little water until all lumps have dissolved. Then quickly stir the cornstarch into the apple mixture. Spread the apple mixture, still hot, over the cake base and smooth it out. Let it cool. Decorate the cooled cake with fruit and let it set in the refrigerator.
