Mix the sugar, flour, and baking soda well in a bowl with a lid. Whisk the buttermilk, vanilla, and 3 tablespoons of jam in a tall mug using a whisk or an electric hand mixer. Add the wet mixture to the dry mixture, mix briefly but thoroughly, and bake on a baking sheet lined with baking paper at 200°C for 20 minutes. Brush with the remaining jam while still hot and let cool. Melt the chocolate in the microwave, in a yogurt maker, or in a double boiler and spread it on the cake. Sprinkle with the sugar confetti or sprinkles and, once the chocolate has set, cut into 12 pieces. The cake will keep fresh in a sealed container for at least 5 days.
