Apple-potato soup

Ingredients for 4 servings:

  • 300 g potatoes
  • 400 g apples
  • 10 g fresh ginger
  • 4 carnations
  • 1.2 liters of vegetable broth
  • Salt
  • pepper
  • 125 ml whipped cream
  • 3 spring onions

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel and chop the potatoes. Chop the apples and core them. Peel the ginger and cut into small cubes. Place the potatoes, apples, ginger, cloves, and broth in a saucepan and simmer over medium heat for about 35 minutes. Puree with an immersion blender, then pass through a sieve and season with salt and pepper. Bring to a boil and add the heavy cream. Trim the spring onions and thinly slice the white and light green parts. Blend the soup again with an immersion blender until frothy and serve sprinkled with the spring onions.
