Ingredients for 12 servings:
- 2 ¼ tsp dry yeast
- 200 ml milk, lukewarm
- 80 g sugar
- 80 g butter, soft
- 1 tsp salt
- 2 eggs
- 520 g flour
- 5 apples, grated
- 120 g brown sugar
- some allspice, clove, ginger, cinnamon (optional only 3 tbsp cinnamon)
- 200 g butter, soft
- 250 g almond(s), coarsely chopped
- some almond butter, optional
- 6 tbsp butter, soft
- 130 g powdered sugar
- 65 g cream cheese
- 2 tsp vanilla extract
- 1 pinch of salt
- Butter for the mold, or release spray
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 45 minutes
For the dough, mix the dry yeast with the lukewarm milk and let it sit for 5 minutes. Then, cream together the sugar, butter, salt, and eggs until fluffy. Then add the flour. Finally, add the yeast milk and knead just until everything is combined. Cover the dough and let it rise in a warm place (+22 degrees Celsius ideal) for 60 minutes. In the meantime, mix together the brown sugar and spices. After an hour of rising, place the dough on a floured surface and roll out to about ½ cm thick. Brush the dough with butter (optionally, spread almond butter on top), distribute the spiced sugar mixture, almonds, and apples evenly over the dough. Then roll the dough into a log and cut into approximately 3 cm thick slices. Next, butter a baking dish or spray it with non-stick spray and place the logs in there with the cut side facing up (don’t place them too close together—it’s better to bake in different shapes or in two batches). Let the dough rise in a cold oven for 20 minutes, then bake at 175°C (350°F) for about 35-40 minutes. While the dough is baking, mix all the frosting ingredients together and refrigerate.
