Ingredients for 2 servings:
- 150 g Flour Type 405
- ¼ tsp, heaped salt
- 50 g butter, cold
- ¾ dl water
- 1 large apple or 2 small ones
- 1 packet of vanilla sugar
- 50 g almonds, ground
- 1 egg(s)
- ½ tbsp cinnamon
- ½ tbsp sugar
- Butter for the molds

For the dough, mix the flour and salt, add the butter, and knead. I do this by hand. Finally, add the water and mix everything together to form a smooth dough (not with a mixer). Then refrigerate for 1-1.5 hours. For the roses, halve and core the apples. Then grate them into slices about 3-5 mm thick and place them immediately in a bowl of water. If you like, you can add cinnamon, lemon juice, sugar, or other spices. I always make it with lemon juice and cinnamon. Microwave for 5-8 minutes, depending on the thickness of the apples. Finally, roll out the dough and cut into strips about 30 cm long. Whisk the egg, add 50 g of almonds and the vanilla sugar, and mix. Spread evenly over the dough, leaving one end free. Then place the apple slices on the dough, overlapping by half. There should still be some space at the bottom. Fold the bottom edge of the dough upwards. Now roll the whole thing up tightly and place it in a pre-buttered muffin tin (preferably silicone). Bake at 180°C (bottom heat, fan oven: 170°C) for at least 45 minutes. I recommend using only bottom heat, as otherwise the apples will turn black.
