Apple semolina casserole

Ingredients for 3 servings:

  • 500 g apples
  • 2 eggs
  • 3 tbsp sugar or vanilla sugar
  • 200 g applesauce
  • 250 g low-fat curd cheese
  • 100 g semolina
  • 2 tsp baking powder
  • 1 pinch of salt
  • Butter for the mold
  • Desiccated coconut or almond flakes for sprinkling

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Wash, peel, and dice the apples. Drizzle with lemon juice. Beat the eggs and sugar until frothy. Add the quark and applesauce (I always use homemade) and stir until the mixture is smooth. Mix the semolina with the baking powder and salt. Then add the dry ingredients to the wet mixture and mix well. Grease a baking dish. Spread half of the mixture on top, then the apples, and finally the remaining quark mixture. If you like, you can sprinkle the casserole with desiccated coconut or almonds. Bake the casserole in a preheated oven at 180°C for about 25-30 minutes.
