Fruit and rice casserole

Ingredients for 4 servings:

  • 500 ml milk
  • 150 g rice pudding
  • 30 g butter
  • 500 g seasonal fruit
  • 4 eggs
  • 100 g sugar
  • 1 pinch of salt
  • 1 large lemon(s), untreated, zest
  • Powdered sugar for dusting
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Fruit casserole

Bring the milk to a boil. Add the rice, salt, and butter and let it swell for about 20 minutes. Cut the fruit into 2 cm pieces. Grate the lemon zest for added flavor. Beat the eggs, sugar, and lemon zest until frothy. Stir in the rice and fruit. Pour the mixture into a greased casserole dish. Bake in a preheated oven at 200°C for about 30 minutes. Sprinkle the casserole with powdered sugar and serve.
