fried spaetzle with apple slices

Crack eggs into a bowl. Make a dough with flour and salt. The dough should be smooth. It’s best to beat until it bubbles. Let the spaetzle dough rest for about 15 minutes. Using a spaetzle grater, grate the dough into boiling salted water. Briefly bring the water with the Knöpfle to a boil. Remove the pan from the heat and, using a slotted spoon, lift some of the spaetzle out of the water. Refresh in a sieve with cold water. Fry the spaetzle in a pan with butter. Add the apple slices and fry until the apples are soft. Add sugar to taste. Raisins can also be sprinkled in, if desired.
