Apricot dumplings

Ingredients for 1 servings:

  • 1 pinch of salt
  • 2 eggs
  • 500 g quark (low-fat curds)
  • 200 g flour (whole wheat flour)
  • 18 apricots, pitted
  • 100 g breadcrumbs
  • Sweetener, for sprinkling

Beat the eggs with a pinch of salt until frothy. Stir in the curd cheese and flour and knead into a smooth dough. Let the dough rest in a cool place for about 30 minutes. Coat the apricots in the curd cheese batter and cook in salted water for about 15 minutes. Meanwhile, gently toast the breadcrumbs in a non-stick pan, roll the finished dumplings in the breadcrumbs, and sprinkle with sugar to serve.
