Ingredients for 6 servings:
- 12 sheets of puff pastry, frozen
- 8 apples
- 150 ml water
- 100 g sugar, brown
- 1 tsp cinnamon powder
- ½ tsp nutmeg
- 2 packs of vanilla sugar, bourbon
- ½ pack of almond sticks or raisins, but can also be omitted
- 2 tsp cornstarch
- 1 pinch of salt
- 150 g powdered sugar
- n. B. water
- possibly vegetable oil, for frying
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
baked instead of fried
Unwrap the frozen puff pastry and let it thaw on baking paper for about 15 minutes. Preheat the oven (200°C fan/convection oven). In the meantime, peel, core, and dice the apples. Place them in a saucepan with 150 ml water, 100 g brown sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 2 packets of Bourbon vanilla sugar, and a pinch of salt. Bring to a boil and simmer over low heat for a good 15 minutes. After the cooking time, remove the liquid with a ladle and whisk it into a bowl with the 2 tablespoons of cornstarch until smooth. Pour the liquid back into the pan. Bring to a boil briefly and remove the pan from the heat. Place the thawed puff pastry sheets individually on a board and top with 1-2 tablespoons of the apple compote. Carefully fold the pastry over and press the edges firmly together. You can then press the edges further with a fork to create a nice pattern. If you don’t want to fold the pastry sheets over, you can also put 3-4 tablespoons of the apple compote on the pastry surface and then cover this with another sheet of pastry, also pressing the edges down firmly. Now place the filled pastry parcels on a baking tray lined with baking paper (about 6 per tray) and bake for about 20 minutes. The parcels will rise nicely and be fluffy. Once cooled, make a glaze from powdered sugar and water and carefully brush it onto the apple parcels. Vanilla sauce goes well with it. Any leftover apple compote also tastes great on a cream cheese roll! Tip: You can also deep-fry the parcels (without a pan). To do this, add vegetable oil to a deep frying pan and heat it up. Add the apple parcels one at a time and fry for about 2-3 minutes on each side until golden brown. Then place on kitchen paper so that the oil can drain off.
