Apple-vanilla cupcakes with buttercream

Ingredients for 1 servings:

  • 500 g flour
  • 250 g sugar
  • 1 pinch of salt
  • 1 packet of baking powder
  • 2 tsp baking soda
  • ½ package vanilla pudding powder
  • 300 ml soy milk (soy drink) (soy rice drink)
  • 250 ml oil
  • 3 apples
  • 220 g margarine (Alsan), room temperature
  • ½ bottle of butter-vanilla flavoring, vegan, e.g. Dr. Oetker
  • 500 ml soy milk (soy drink) (soy rice drink), lukewarm
  • 600 g powdered sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Makes 12 pieces; vegan

For the cupcakes, first mix all the dry ingredients together, then mix with the soy rice drink and oil. Peel the apples, cut them into small pieces, and fold them in. Divide the batter evenly into cupcake cases and place them in the preheated oven. Bake at 180°C (convection oven) for about 20 minutes. Be sure to let the cupcakes cool before adding the topping! For the topping, mix together the Alsan margarine, the butter vanilla flavor, and the soy rice drink. Gradually stir in the powdered sugar. The topping can now be applied to the cupcakes using a cream pipe, for example.
