Apple Wine Cake

Ingredients for 12 servings:

  • 125 g butter
  • 125 g sugar
  • 1 tbsp vanilla sugar
  • 1 egg(s)
  • 250 g flour
  • 1 kg apples
  • 750 ml wine, white, sparkling wine or apple juice
  • 150 g sugar
  • 1 tbsp vanilla sugar
  • 2 pts. pudding powder, vanilla
  • 2 cups of cream
  • 2 points cream stiffener
  • 1 tbsp vanilla sugar
  • Cinnamon or roasted almond flakes

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

First, knead the dough ingredients and place them in a 26cm springform pan with high sides. Then, peel and quarter the apples, remove the cores, and cut them into small cubes. Heat the wine, leaving a small amount, in a large saucepan with the sugar and the apple pieces. Mix the custard powder with the remaining wine and add it to the boiling wine-apple mixture, stirring well until a firm paste forms. Pour this mixture into the springform pan and bake at 175°C for 60-70 minutes. Once the cake has cooled, whip the cream with the cream stiffener and vanilla sugar until stiff peaks form and spread it on the cake. Sprinkle with toasted almond flakes or cinnamon powder. Tip: This cake turns out best if you bake it the night before and add the cream the next day, as it will be really cold by then! Enjoy!
