Ingredients for 12 servings:
- 350 g butter
- 6 eggs
- 350 g sugar
- 1 pinch of salt
- 200 g flour
- 200 g cornstarch
- Lemon(s) – zest, grated
- Powdered sugar, for dusting
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Melt the butter slowly in a saucepan, but do not let it brown. Beat the eggs, sugar, salt, and lemon zest for 3-4 minutes until light and creamy. Stir in the flour and cornstarch a tablespoon at a time. Finally, stir the hot butter into the batter. Line a large loaf pan with baking paper. Pour in the batter and bake at 180°C for about 60-75 minutes. After 15 minutes of baking, score the surface lengthwise with a knife to allow the cake to open nicely. Once cooled, dust with powdered sugar.
