Ingredients for 1 servings:

  • 225 g flour
  • 1 tsp, leveled baking powder
  • 75 g sugar
  • 1 tbsp vanilla sugar
  • 1 pinch of salt
  • 1 egg(s)
  • 75 g butter
  • 4 apples (claret apples)
  • 2 packs of pudding powder, vanilla
  • 375 ml white wine
  • 375 ml apple juice
  • 400 g cream
  • 2 packs of cream stiffener
  • 2 packets of vanilla sugar
  • 100 g pistachios, chopped

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Quickly knead the dough ingredients with your hands on a lightly floured surface until smooth, then wrap the dough in cling film and chill for about 1 hour. Grease a 26 cm springform pan and preheat the oven to 175°C. Peel, quarter, core, and finely chop the apples. Mix the custard powder with the sugar and vanilla sugar in the wine and apple juice. Heat until the custard thickens, then fold in the apples. Roll out the dough and place it in the pan, forming a rim about 3 cm high. Spread the apple mixture on top and bake the cake for about 60 minutes. Then let it rest in the pan for about 15 minutes. Remove from the pan and let it cool for 3-4 hours. Whip the cream with the cream stabilizer and vanilla sugar until stiff peaks, and garnish the cake with the whipped cream and chopped pistachios.
