Ingredients for 1 servings:

  • 2 eggs
  • 250 ml sugar
  • 150 ml oil, neutral
  • 200 ml applesauce
  • 400 ml flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Estonian recipe (makes 18 muffins)

In a bowl, whisk together the eggs, sugar, oil, and applesauce. In a second bowl, combine the flour with cinnamon, baking powder, and salt. Then, mix the two mixtures well. Line a muffin tin with paper baking cups, fill with batter, and bake at 180°C (convection oven) for 15 to 20 minutes.
