Applesauce muffins filled with white chocolate

Ingredients for 1 servings:

  • 150 ml buttermilk
  • 50 g oat flakes
  • 100 g flour (type 405)
  • 100 g flour, whole grain
  • 1 tsp cinnamon powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 120 g sugar
  • 200 g applesauce
  • 80 ml vegetable oil
  • 1 bar of white chocolate (12 pieces)
  • 1 tbsp brown sugar (e.g. mascota sugar)
  • 12 paper baking cups

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

very juicy, makes 12 pieces.

Preheat the oven to 160°C (fan-assisted). Line the cups of a muffin tin with paper baking cups. In a small bowl, combine the oats and buttermilk. In another bowl, combine both flours with the cinnamon, baking powder, and baking soda. In another bowl, lightly beat the egg, then add the sugar, applesauce, oil, and the oat-buttermilk mixture and mix. Add the flour mixture and stir just until the dry ingredients are moistened. Spoon half of the batter into the muffin tins, place a piece of chocolate on top of each, and cover with the remaining batter. Sprinkle with a little brown sugar and bake for 20-25 minutes. Remove from the oven and let rest in the tin for about 5 minutes. Then let cool on a wire rack.
