Apricot-apple slices with meringue

Ingredients for 1 servings:

  • 1 ½ kg apples
  • 6 tbsp lemon juice
  • 1 can apricot(s)
  • 9 eggs
  • 250 g butter, soft
  • 600 g sugar
  • 1 packet of vanilla sugar
  • 1 lemon(s), untreated, grated peel
  • 450 g flour
  • 1 packet of baking powder
  • 3 tbsp milk
  • 5 tbsp almonds, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sheet cake

Peel, quarter, core, and slice the apples. Drizzle with 5 tablespoons of lemon juice. Drain the apricots well. Separate 8 eggs. Cream the butter with 250g of sugar, vanilla sugar, and lemon zest. Gradually stir in the egg yolks and 1 whole egg. Mix the flour and baking powder and stir in with the milk. Grease and flour a baking tray. Spread the batter evenly on the tray and top with apple slices and apricots. Scatter the almonds on top. Bake in a preheated oven at 150°C (convection oven) for about 40 minutes. Beat the egg whites until stiff, adding 1 teaspoon of lemon juice. Slowly add 350g of sugar and continue beating until the sugar is completely dissolved. Brush the cake with the beaten egg whites and bake at the same temperature for another 12 minutes.
