Ingredients for 1 servings:

  • 350 g flour
  • 1 packet of baking powder
  • 90 g sugar
  • 250 g low-fat curd cheese
  • 7 tbsp milk
  • 7 tbsp oil
  • 1 egg(s)
  • 500 g low-fat curd cheese
  • 100 g sugar
  • 60 g butter, melted
  • 20 g cornstarch
  • 2 eggs
  • 1 pinch of salt
  • some lemon zest
  • 1 kg apricot(s)
  • 130 g flour
  • 80 g sugar
  • 80 g butter
  • 1 pinch(s) cinnamon powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

For the dough, combine the flour, baking powder, sugar, quark, milk, oil, and egg into a quark-oil dough and roll it out on a baking sheet lined with baking paper. For the filling, whisk the quark with sugar, butter, cornstarch, eggs, salt, and lemon zest and pour it over the dough. Arrange the halved and pitted apricots on top, convex side up. Using your hands, make a crumble from the flour, sugar, butter, and cinnamon powder and sprinkle it on top. Bake at 175°C (fan oven) for about 45 minutes.
