Ingredients for 1 servings:

  • 2 ½ tbsp apricot jam without pieces
  • 4 tbsp oil
  • 4 tbsp water
  • 3 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Whisk all ingredients together and season to taste. This dressing pairs well with lamb’s lettuce or spinach salad (young) with small aromatic tomatoes. You could also toast a mixed seed (sunflower seeds, pumpkin seeds) without fat and sprinkle it on top. It also pairs well with chicken and/or bread.
