Apricot dumplings

Ingredients for 1 servings:

  • 500 g quark
  • 200 g flour
  • 3 eggs
  • 14 apricots
  • 14 sugar cubes
  • lemon juice
  • oil
  • Cinnamon and sugar for sprinkling
  • e.g. butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

makes 14 pieces

Mix the quark, flour, and eggs with 3 tablespoons of oil to form a soft dough. Place 3 tablespoons of flour on a deep plate, scoop out some dough with a spoon, and place it on the flour. Press an apricot on top. Remove the stone and replace it with a cube of sugar sprinkled with 3 drops of lemon juice. Rub your hands with a little oil, push them under the dumpling, and form a dumpling. Immediately place in boiling water. When all the dumplings float to the top, let stand for another 10 minutes. Cut the dumplings into pieces, sprinkle with cinnamon sugar, and drizzle with melted butter. Following my mother-in-law’s recipe, you can form the dumplings really effortlessly. I always had a hard time forming the dumplings before because the dough is so sticky.
