Aromatic rhubarb compote

Ingredients for 4 servings:

  • 100 g sugar
  • 500 ml water
  • Ginger, fresh, sliced
  • 500 g rhubarb, peeled, cut into pieces
  • 1 lemon(s), untreated, juice and grated zest
  • 1 tsp cornstarch (not necessary)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Gently heat the sugar in 500 ml water, stirring constantly, until dissolved. Add the ginger slices and cook until the flavor develops. Remove from the sugar water with a slotted spoon and add the rhubarb pieces. Cook briefly (about 2 minutes). Using a slotted spoon, transfer the rhubarb pieces to a bowl and allow the flavored sugar water to reduce (thicken with starch if necessary). Add the juice and zest of the lemon peel and stir into the rhubarb. Serve after cooling, with whipped cream if desired.
