Apricot Power Balls

Ingredients for 1 servings:

  • 50 ml orange juice
  • 70 g apricot(s), dried
  • 25 g date(s), dried (pitted)
  • 2 tbsp sesame paste
  • 50 g coconut flakes
  • ½ tsp cinnamon, optional
  • 30 g cashew nuts, coarsely chopped
  • 1 tbsp flaxseed

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Energy balls with apricots, dates, coconut flakes and cashew nuts

Start with the orange juice! Pour the orange juice into a blender and add all the other ingredients one at a time (except for the cashews and flaxseed), then blend everything. (My blender can’t handle this anymore, but an immersion blender worked fine.) Stir in the roughly chopped nuts and flaxseed, wet your hands, and form about 10-12 balls each. (I prefer them a little smaller.) Place on a plate, cover with foil (or in a storage container), and chill in the refrigerator for 1 hour. Best before in the refrigerator: about 3-5 days. Variation: Instead of the sesame paste, you can also use almond or peanut butter. Add small chocolate chips to the dough or roll the ball in them at the end; you can also roll it in sesame seeds.
