Apricot rings

Ingredients for 1 servings:

  • 400 g flour
  • 120 g sugar
  • 1 pinch of salt
  • some lemon peel
  • 1 packet of vanilla sugar
  • 1 egg yolk
  • 2 tbsp rum
  • 250 g butter
  • 250 g jam, apricot or apricot
  • Powdered sugar, for dusting

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Combine flour, sugar, salt, lemon zest, vanilla sugar, egg yolks, rum, and butter in a shortcrust pastry case. Chill the dough for 2 hours, roll it out, and cut out half of each circle into round cookies and half into rings. Bake at 180°C for about 20 minutes until golden brown. Heat the jam and spread 1 teaspoon on each circle. Dust the rings with powdered sugar and place them on the cookies. Fill the holes with a little more jam.
