Apricot sauce (spicy)

Ingredients for 4 servings:

  • 1 gr. can/n apricot(s)
  • 1 onion(s) or shallot
  • 1 clove(s) garlic
  • 1 red chili pepper(s)
  • 1 bunch of spring onions (green part)
  • 1 tsp curry paste, green
  • some butter or vegetable oil
  • salt and pepper
  • 1 tsp brown sugar

Working time approx. 15 minutes; Total time approx. 15 minutes

fruity, spicy sauce, well suited for Asian dishes

Sauté the very finely chopped onions and garlic in hot fat. In the meantime, puree the apricots (without the juice). Add the fruit purée to the pot with the onion and garlic mixture and heat through. Stir in the curry paste and brown sugar. The amount of curry paste can, of course, be adjusted to your taste. Finely slice the chili pepper and spring onions and add them. Heat everything until hot. This sauce came about “by chance” and tasted very good with cooked chicken. The interplay of colors: orange, green, and red also makes it a real visual delight.
