Apricot sheet cake

Ingredients for 1 servings:

  • 4 eggs
  • 250 g butter
  • 200 g sugar
  • 220 g flour
  • 1 pkt. pudding powder, vanilla
  • 10 g baking powder
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • ½ lemon(s), the juice
  • 700 g apricots
  • powdered sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Pit and quarter the apricots. Beat the softened butter with the sugar until well blended. Add the eggs and beat until creamy. Combine the flour with the baking powder, pudding powder, salt, vanilla sugar, and lemon juice. Preheat the oven to 160°C. Spread the batter onto a smaller baking sheet (30 x 28 cm) and top with the quartered apricots. Bake for about 35 minutes. Sprinkle the cooled cake with powdered sugar.
