Arctic char in foil

Ingredients for 4 servings:

  • 1 ½ kg fish (Arctic char), ready to cook
  • 1 clove(s) garlic
  • 50 g leek
  • ½ bunch parsley
  • ½ bunch of dill
  • 6 sprigs of thyme
  • 1 bay leaf
  • 10 juniper berries
  • ⅛ liter white wine, dry
  • 80 g butter
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Peel and finely chop the garlic. Wash the herbs. Slice the leek into rings. Stuff the fish belly with herbs and spices. Place the fish on a sheet of heavy-duty aluminum foil. Add the white wine and butter and seal the foil like a parcel. Place the foil in a baking dish and cook in a preheated oven at 200°C for about 30-40 minutes. Serve the fish in the baking dish. Serve with a green salad and white bread.
