Ingredients for 1 servings:

  • 1 cup corn flour, precooked, light yellow, e.g. from Pan
  • 1 cup of lukewarm water
  • ½ tsp salt
  • 1 pack of feta cheese

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cornbread – flatbread from Colombia

Put 1 cup of corn flour (I always use a coffee mug) into a bowl. Add 1 cup of lukewarm water and mix. Crumble the feta cheese and add it with the salt. Mix well until a smooth mixture forms. The flour will absorb all the water. The mixture should be smooth and barely stick to your hands. If you let the mixture stand for too long, it will dry out, so always use it immediately. Shape the dough into discs with your hands, about 10 cm in diameter and about 1 cm thick. You can make them larger or smaller, as desired. The smaller they are, the easier they are to shape and won’t tear. Press the edges down lightly to prevent further cracks. Cover the bottom of a pan with oil. When the oil is hot, add the arepas until golden brown, turn them over, and then fry on the other side. Corn flour (harina de maiz precocida) is available in almost any Asian store. The corn flour must be precooked.
