Armageddon Potatoes, Asian Fries and Duet Sweets

‘Armageddon Potatoes’: Chili fries with black mayonnaise and white ketchup
- 1 liter Oil
- 100 ml Chili oil
- 1 kg Waxy potatoes
- 500 ml Salad mayonnaise
- 4 piece Sun ripened tomatoes
- 1 pack Sepia ink
- Salt
- Pepper
- Sugar
‘Asia fries’: Convicted soy and coriander fries with Japanese mayonnaise
- 1 kg Baby potatoes purple
- 400 g Japanese mayonnaise
- 1 bunch Coriander
- 1 piece Butter
- 200 ml Soy sauce
‘Duett sweetens’: spiral made of sweet potato and table potato with purple cheese sauce & salt shampoo
- 500 g Waxy potatoes
- 500 g Sweet potatoes
- 200 ml Cream
- 100 ml Milk
- 60 g Cheddar cheese
- 1 tsp Sea-Salt
- 100 g Violet sugar

‘Armageddon-Potatoes’: Chili-Pommes mit schwarzer Mayonnaise und weißem Ketchup
- Wash the potatoes and cut them into “French fries” with the skin on. First heat the oil with the chili oil in a saucepan to 160C ° – 180C ° (that is about 2/3 of the maximum temperature of a stove). Now deep-fry the fries in the oil for about 2 minutes, remove and drain well on kitchen paper.
- Now the stove is heated to the maximum temperature (approx. 200C ° -220C °). Now the fries are fried until golden and lightly salted.
- Preparation of the sauces: 250 ml of the mayonnaise are now mixed with the packet of sepia-squid color to get the “black” mayonnaise. The sun-ripened tomatoes are pureed very finely with a hand blender and then strained through a cotton cloth. This is how you get a clear tomato essence. Season the essence with salt, pepper and sugar and mix with the remaining 250 ml of the mayonnaise. Serve the fries in the traditional way with the “black” mayonnaise and the “white” ketchup in a bowl.
‘Asia-Fritten’: Convierte Soja-Koriander-Pommes mit japanischer Mayonnaise
- Wash the potatoes and cut them into slices as thick as your thumb. Melt the butter in the pan and add the soy sauce. Put the potato slices in the butter-soy sauce and confine each side for about 10 minutes at a very low simmering temperature (slowly simmer the food in oil / fat).
- Cut the coriander into small pieces with a chopping knife. Take out the potato slices and only allow them to drain on one side. Press the butter side into the finely chopped coriander.
- 6th serving tip: Drape the confit potato slices with the coriander side up on a plate and pour the Japanese mayonnaise over them.
‘Duett süßet’: Spirale aus Süßkartoffel und Speisekartoffel mit violetter Cheese-Sauce & Salzshampoo
- Work the potatoes and sweet potatoes with the spiral cutter and unscrew the corresponding spirals. Now twist the two potato spirals together again and season with salt, pepper and sugar. The spirals are now baked in the oven at approx. 180C for 10 minutes. For a nice color, it is important to brush the potato spirals in the oven with a little oil.
- Mix the cream with the cheddar cheese and the violet sugar (this ensures the purple color) and season with salt and pepper. Dissolve the sea salt in the milk and froth up into milk foam.
- Serving tip: Place the fries in the middle of a plate and pour the purple cheese sauce on top. The “salt shampoo” is put on top as a topping.
