Hearty Country Bread
The perfect hearty country bread recipe with a picture and simple step-by-step instructions.
- 850 g Flour type 1050
- 150 g Rye flour
- 20 g Yeast
- 1 Pr Sugar
- 1 packet Sourdough dried
- 600 ml Lukewarm water
- 25 g Salt
- 10 g Bread spice mix
- 150 g Mix of seeds – pumpkin, sunflower – and pine nuts
- Quantity makes a bread of 1700 gr. ….. since there are only two of us left, I cut the bread and freeze a few packets …. so I always have bread to hand, even if there is a surprise visitor comes
- Mix the yeast with a pinch of sugar and 100 ml of lukewarm water in a bowl, cover and let rise for approx. 10 minutes
- Mix the flour and rye flour and place in a bowl, add salt, bread spices and dried sourdough and stir. Put the dissolved yeast and the grains in the bowl and let the food processor work. Knead the yeast dough vigorously for at least 10 minutes, then cover and let rise in a warm place (I put it in my bed and cover it, so it can rest for 90 minutes)
- After the first rise, remove from the bowl, knead again and then form a loaf of bread, place on a baking sheet lined with baking paper, cut several times with a knife and cover …. let rise again for 30 minutes
- Preheat the oven to 230 ° C – convection and then place a cup of boiling water on the baking sheet. Put the bread in the oven and bake for 15 minutes, then turn the oven down to 180 ° C and bake for another 40 minutes
- The bread is ready when you tap it on the underside and it sounds hollow
- Let cool on a wire rack
