Aromatic dressing with hemp and walnut oil

Ingredients for 2 servings:

  • 3 tbsp vinegar (mild apple cider vinegar)
  • salt and pepper
  • ½ tsp mustard, mild
  • 4 tbsp oil, sunflower
  • 3 tbsp oil, hemp
  • 2 tbsp oil, walnut
  • 1 shallot(s)
  • possibly chicken broth or
  • apple juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together the vinegar and salt until the salt is completely dissolved. Then add the mustard and pepper and mix well. Gradually whisk the oil into the vinegar until an emulsion forms. If the dressing becomes too thick, thin with a little chicken stock or apple juice. Finally, add the finely chopped shallot to the dressing. A quick note on hemp oil: Hemp oil is deep green and has a strong, nutty flavor. The THC (tetrahydrocannabinol) content is negligible, so hemp oil has no intoxicating effects. In addition to its delicious flavor, hemp oil contains all the essential fatty acids necessary for the human body, making it one of the most valuable cooking oils—although not very well known in German cuisine. It is available at health food stores and organic food stores.
