Aronia-blueberry jam

Ingredients for 1 servings:

  • 500 g aronia berries
  • 1,000 g blueberries
  • 750 g gelling sugar 2:1
  • 2 lemons

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 34 minutes

Wash the aronia berries and remove the stems, e.g. using a small fork. Puree in a food processor or with an immersion blender. I prefer to use a food processor as it keeps the kitchen clean! The red juice is very colorfast and splatters a lot when pureed. Add the aronia berries to the pot, chop the blueberries and add them. Thoroughly mix the fruit mixture with the gelling sugar and the juice of the squeezed lemons. Bring everything to a boil, stirring constantly. Boil for 4 minutes at a rolling boil, then pour into hot, rinsed twist-off jars and seal immediately. Makes approx. 10-12 small jars.
