Ingredients for 4 servings:
- 1 bowl of arugula
- 1 bowl of lamb’s lettuce
- 6 stalk(s) asparagus, green, fresh
- 1 tsp, heaped mustard, sweet
- 5 tbsp raspberry vinegar
- 6 tbsp rapeseed oil
- salt and pepper
- 1 pinch(s) Italian herbs, dried
- 1 tbsp, heaped honey

Working time approx. 20 minutes; Rest time approx. 10 minutes; Total time approx. 30 minutes

Wash and trim the arugula and lamb’s lettuce. Peel the asparagus and slice it thinly. Let the asparagus slices rest with a little salt for about 10 minutes. For the marinade, whisk together the remaining ingredients. Squeeze the asparagus slices lightly and add them to the marinade. Combine everything just before serving and mix lightly.
