Arugula and grape salad with cheese strips and roasted pine nuts

Ingredients for 4 servings:

  • 150 g cheese, mild and nutty
  • 2 tbsp orange juice, freshly squeezed
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tsp honey
  • some salt and pepper
  • 4 tbsp olive oil
  • 150 g arugula
  • 50 g pine nuts
  • 200 g grapes, light and dark

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Cut the cheese slices into thin strips. Whisk the juices together with a little salt, pepper, honey, and olive oil to make a creamy dressing. Wash and trim the arugula, and spin it dry. Toast the pine nuts in a pan without adding any fat until golden brown. Rinse the grapes and halve them. Toss the arugula and grapes with the dressing and scatter the cheese strips and pine nuts over the top. Serve with fresh bread.
