Ingredients for 2 servings:
- 100 g arugula
- 4 tomatoes, dried and preserved in oil
- 2 tbsp Parmesan, grated
- 4 tbsp pumpkin seed oil
- Pepper, from the mill
- Salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash and trim the arugula. Drain the tomatoes and cut into small pieces. Place both in a bowl, season with salt and pepper. Drizzle with pumpkin seed oil, toss the salad, and sprinkle with Parmesan cheese.
