Arugula spaetzle

Ingredients for 4 servings:

  • 2 eggs
  • 1 tsp salt
  • 200 g flour (whole wheat)
  • ½ bunch arugula (without coarse stems)
  • 100 ml water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk together the eggs and salt. Gradually add the whole wheat flour and the water. Knead into a tough dough. Trim and finely chop the arugula, and fold it in. Then let the dough rest for 30 minutes. Bring water and salt to a boil and either scrape the dough into the boiling water with a spaetzle slicer or press it into the boiling water with a spaetzle press. The spaetzle are ready when they float to the surface and have briefly risen to the surface. Finally, strain through a sieve and serve hot.
