Ingredients for 4 servings:
- 500 g flour
- 200 ml water
- 100 ml milk
- 1 tsp oil
- 1 tsp tomato paste
- 1 tsp paprika powder, sweet or hot
- 4 eggs
- 1 tsp salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Simply place the ingredients in a mixing bowl and whisk into a smooth batter. You’ll need real arm strength for this. Adding the oil makes the spaetzle very fluffy. The tomato paste and paprika powder can, of course, be omitted or replaced with other spices. I only added it for the color. If you leave it out and add a little turmeric, the spaetzle will turn yellow. Using a spaetzle slicer or similar device (spaetzle machine, spaetzle witch, etc.), add the finished batter to boiling water. When the spaetzle float to the top, they’re done and can be eaten immediately. We like to top the spaetzle in the oven with cheese (Edam) and add previously fried ham and onions. They’re perfect for freezing.
