Arugula with cherry tomatoes and Parmesan

Ingredients for 2 servings:

  • 1 bowl of arugula
  • 1 bowl of cherry tomatoes
  • 2 clove(s) garlic, squeezed
  • 5 tbsp Balsamic vinegar, brown
  • 2 tbsp olive oil, cold pressed
  • Salt and pepper, black
  • e.g. Parmesan, freshly grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

especially delicious with meat and grilled food

Wash and drain the arugula. Wash and quarter the cherry tomatoes. In a bowl, combine the balsamic vinegar with the olive oil and crushed garlic, and season with salt and pepper to taste. Add the arugula and cherry tomatoes and mix well. When serving, sprinkle freshly shaved Parmesan cheese on top of the salad. It’s a wonderful side dish for meat and grilled dishes. If serving the salad as a main course, I recommend bruschetta.
