Ingredients for 1 servings:

  • 1 ½ kg pork for grilling, unseasoned
  • 120 ml Ketjap Manis
  • 30 ml oil, neutral
  • 3 cm ginger root, freshly grated, about 15 g
  • 2 garlic cloves
  • 1 tsp sambal oelek
  • 1 tsp salt

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Combine the marinade ingredients and season to taste, adding more pepper if desired. Coat the meat—we usually use pork, but chicken is also delicious—in the marinade and let it rest in the refrigerator until ready to grill. Stir it occasionally. This marinade doesn’t require any additional barbecue sauce; the marinated meat speaks for itself. A simple, unfussy leaf salad goes well with it.
