Ingredients for 4 servings:
- 3 chicken breast fillets
- 1 packet of rice (parboiled)
- 1 bag of Asian vegetables (frozen)
- 2 cans of coconut milk
- curry powder
- Paprika powder
- Vegeta
- salt and pepper

Place the rice in a casserole dish, ensuring the bottom is well covered. Remove any tendons, etc., from the chicken breast fillets and place them on top of the rice. Arrange the vegetables over the rice and chicken. Bring the coconut milk to a boil in a saucepan and season with the curry powder, paprika from the spice mix, and salt and pepper to taste. Once everything has boiled, pour the sauce over the contents of the casserole dish to ensure everything is evenly coated. Place everything on the middle rack of the preheated oven and cook at approximately 180°C for 30-40 minutes.
