Asian Duck with Stir-fried Vegetables and Rice

Ingredients
 

For the wok vegetables:

  • 3 Cup Fragrant rice
  • 1 Pc. Peppers yellow
  • 1 Pc. Red peppers
  • 250 g Snow peas
  • 100 g Shii-Take mushrooms
  • 100 g Mushrooms
  • 3 Pc. Carrots
  • 3 Pc. Onion
  • 100 ml Soy sauce
  • 1 tbsp Fish sauce
  • Five-spice powder
  • Sesame oil
  • Salt
  • Pepper

For the peanut sauce:

  • 1 Can Peanut butter
  • 200 ml Cream
  • 100 ml Milk
  • 0,5 Can Coconut milk
  • Vegetable broth

For the Sezchuan sauce:

  • 75 ml Vinegar
  • 150 g Sugar
  • 150 ml Soy sauce
  • 7 tbsp Rice vinegar
  • 7 tbsp White wine
  • 1 tsp Chili Sauce (Sambal Oelek)
  • 1 tsp Chopped ginger
  • 1 Pc. Garlic cloves pressed
  • Roasted cashew nuts

For the Hoi Sin sauce:

  • 1 Pc. Garlic cloves pressed
  • 1 tbsp Soy sauce
  • 1 tbsp Sugar
  • 3 tbsp Hoi Sin Sauce
  • 3 tbsp Plum sauce
  • 2 tsp Sesame oil

Instructions
 

The duck breast:

  • Sear the duck breast fillet with a little oil (approx. 2 minutes on each side). Now equip the fillet with a thermometer and place in the oven preheated to 100 degrees. Cut the duck open at a core temperature of 62 degrees and let it steep for a few minutes at 60 degrees. Serve with pepper and fleur de sel.

The wok vegetables:

  • Cut the peppers, snow peas, shiitake mushrooms, mushrooms, carrots and green onions into thin strips. Fry the vegetables in a wok with a little sesame oil. Then add the soy sauce and the fish sauce and season with the seasoning powder, salt and pepper. Then let the vegetables simmer on a low level until they are firm to the bite.

The peanut sauce:

  • Mix the peanut butter with the cream, milk and coconut milk and bring to the boil. Season to taste with salt and ground pepper

The Szechuan sauce:

  • Brown the garlic and ginger with a little sesame oil. Add vinegar, sugar, soy sauce, rice vinegar, white wine and sambal oelek and bring to the boil for approx. 3-5 minutes. Finally add roasted cashew nuts.

The Hoi Sin Sauce:

  • Briefly fry the garlic in sesame oil. Then add the soy sauce, Hoi Sin sauce, plum sauce and sugar and bring to the boil. Finished!
