Ingredients for 4 servings:
- 150 g chicken-flavored mie noodles (2 sheets)
- 1 bell pepper(s)
- 2 carrots
- 1 bunch of spring onions
- 2 tbsp rapeseed oil
- 4 tbsp soy sauce
- 1 tbsp tomato paste
- 1 tsp curry paste, red
- 2 garlic cloves
- salt and pepper
- curry powder
- lemon juice
- Parsley
- mint
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the noodles according to the instructions, drain, and place in a large bowl. Peel the carrots and chop them very finely along with the bell peppers and spring onions. Blanch the spring onions and carrots briefly to prevent them from becoming too hard, and let them cool. For the dressing, combine the oil, soy sauce, and lemon juice. Crush the garlic and add it along with the tomato paste, curry paste, and finely chopped herbs. Season everything and mix well. Add the vegetables to the noodles and pour the dressing over them. Mix everything well and let it sit for about 2 hours.
