Asian noodle frittata with leek and ginger

Ingredients for 2 servings:

  • 200 g noodles, e.g. Chinese egg noodles or spaghetti or macaroni
  • 1 tbsp oil
  • 1 piece(s) ginger, freshly grated
  • 1 garlic clove(s), freshly squeezed
  • 400 g leek, cleaned and cut into fine rings
  • 120 g ham, cut into strips, optional
  • Salt and pepper, freshly ground
  • Soy sauce
  • 4 eggs

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Cook the noodles according to the package instructions, drain, and set aside. Meanwhile, heat cooking oil in a pan over high heat. Add the ginger and garlic and sauté briefly. Then add the leek and ham, if using, and season with salt, pepper, and soy sauce. Cook everything over medium heat for 5 to 10 minutes. Mix the noodles with the leek. Whisk the eggs and season with salt and pepper, then pour over the leek and noodle mixture. Reduce the heat to low. Cover the pan and let everything stand for 10 minutes. Delicious hot or cold!
