Asian Noodle Wok

Ingredients
 

  • 100 g Mie noodles
  • 1 tbsp Oil
  • 250 g Prawn tails (raw, peeled, glazed, frozen)
  • 100 g Small herb strings (alternatively possibly Small mushrooms)
  • 1 piece Ginger approx. 20 g
  • 1 Red chilli pepper
  • 1 Large clove of garlic
  • 50 g Cashew nuts
  • 4 tbsp Peanut oil
  • 1 packet Fresh coriander 15 g
  • 200 ml Freshly squeezed orange juice
  • 3 tbsp Creme fraiche Cheese
  • 1 tsp Liquid honey
  • 1 tsp Sugar
  • 1 big pinch of salt
  • 1 big pinch of pepper
  • 1 tbsp Food starch

Instructions
 

  • Cook Mie noodles in hot water for about 10 minutes, drain through a sieve and toss in oil (1 tbsp) in a hot saucepan. Wash the coriander, shake dry and chop with the stalks. Set aside 2 leaves for garnish. Halve the orange and squeeze out. Thaw the shrimp tails for about 1 hour, rinse and drain well. Heat peanut oil (2 tbsp) in the wok, fry the prawn tails for about 3–4 minutes and remove from the wok. Add peanut oil (2 tbsp) and fry the diced chilli peppers, diced ginger and diced garlic cloves in it for about 1 minute / stir-fry, add the herb strings and fry / stir-fry for about 1 minute. Deglaze / pour in the freshly squeezed orange juice and simmer for about 5 minutes. Add the prawn tails, stir in the crème fraîche (3 tbsp), fold in the chopped coriander and cashew nuts. Season with liquid honey (1 teaspoon), sugar (1 teaspoon), salt (1 big pinch) and pepper (1 big pinch). Dissolve the cornstarch (1 tbsp) in a little cold water, add to the wok and let everything thicken a little. Finally fold in the Mie noodles. Serve the Asian noodle wok garnished with coriander.
