Asian Pork Tenderloin with Vegetables and Yellow Basmati Rice
The perfect asian pork tenderloin with vegetables and yellow basmati rice recipe with a picture and simple step-by-step instructions.
Asian pork fillet with vegetables:
- 1 Pork fillet approx. 600 g
- 250 g Brown mushrooms
- 250 g Onions
- 0,5 Red peppers approx. 100 g
- 0,5 Yellow pepper approx. 100 g
- 0,5 Green peppers approx. 100 g
- 2 Garlic cloves
- 1 Red chilli pepper
- 1 piece Ginger the size of a walnut
- 2 tbsp Sunflower oil
- 1 Can Coconut milk 400 ml
- 400 ml Water
- 1 tsp Salt
- 1 tsp Ground colored pepper
- 1 tsp Sweet paprika
- 1 tsp Turmeric
- 1 tsp Mild curry powder
- 1 tsp Sambal oelek
- 0,5 tsp Rose paprika hot
- 1 tbsp Sweet soy sauce
- 0,5 Cup Cut coriander
- 2 tbsp Tapioca starch
Basmati rice:
- 250 g Basmati rice
- 1 tsp Salt
- 1 tsp Turmeric
To serve:
- Parsley stalks for garnish
Asian pork fillet with vegetables:
- Parry / strip / clean the pork fillet and cut into strips. Clean and wash the peppers and cut into small diamonds. Peel the onions, cut into eighths and slice / assemble them apart. Clean / brush the mushrooms and cut in half. Peel and finely dice the garlic cloves and ginger. Clean / core the chilli pepper, wash and finely dice. Heat sunflower oil (2 tbsp) in the wok, fry the pork fillet strips vigorously / stir-fry and slide them to the edge of the wok. Now add the vegetables one after the other (garlic clove cubes + ginger cubes + chilli pepper cubes, onion wedges, paprika diamonds and mushroom halves) and fry / stir fry. Deglaze / pour in the coconut milk (400 ml) and water (400 ml) and add salt (1 teaspoon), colored pepper (1 teaspoon), sweet paprika (1 teaspoon), turmeric (1 teaspoon), mild curry powder (1 Teaspoon), sambal oelek (1 teaspoon), spicy rose papri-ka (½ teaspoon) and sweet soy sauce (1 tbsp). Let everything simmer / boil for about 15 minutes with the lid closed. In the last few minutes, fold in the sliced coriander and thicken with tapioca starch dissolved in cold water. As soon as the liquid starts to thicken, remove the wok from the stove.
Basmati rice:
- Boil / stir rice in water (450 ml / 1 teaspoon salt + 1 teaspoon turmeric), set the temperature to the lowest level, cover and cook for approx. 20, tear through with a fork and allow to cool
Serve:
- Serve sliced Asian pork tenderloin with vegetables and yellow basmati rice, garnished with parsley.
