Homemade Mulled Wine Ice Cream on Caramelized Apple Ring
The perfect homemade mulled wine ice cream on caramelized apple ring recipe with a picture and simple step-by-step instructions.
For the ice cream
- 2 liter Good mulled wine (please pay attention to good quality / taste)
- 1 Organic clementine / tangerine
- 1 Cinnamon stick
- 1 Star anise
- 1 Vanilla pod
- 5 Egg yolks, fresh
- 100 g Sugar
- 1 tsp Na alginate
- 100 g Cold butter
Caramelized apple rings
- 2 Apples sour
- 2 tablespoon Calvados
- Sifted powdered sugar
- Ground cinnamon
Mulled wine ice cream
- Bring the mulled wine to a boil in a large saucepan. Wash the clementine, cut it into slices and add to the saucepan with the cinnamon stick and star anise. Simmer (reduce) until approx. 600 ml of pure liquid remain. Sieve off the liquid and let it cool down. Scrape out the vanilla pod. Beat the egg yolks with the sugar and vanilla pulp in a saucepan over a steam bath until frothy. Add the reduced mulled wine. Draw off the liquid over the vapor to the rose. Slowly mix in the sodium alginate with a hand blender. Liquid should have the consistency of cream. Fold in the cold butter. Put the liquid in an ice cream maker and then let it freeze overnight.
Caramelized apple rings
- Peel and core the apples into slices and drizzle with calvados. Dust with powdered sugar and fry in a pan (grill pan). To remove, sprinkle with cinnamon powder and serve with the ice.
