Asian Sesame Noodle Salad

Ingredients
 

  • 125 g Sesame seeds
  • 300 g Carrots
  • 200 g Snow peas
  • 1 pole Leek
  • 250 g Broccoli
  • 300 g Asian rice or egg noodles
  • 2 tbsp Coconut oil
  • 3 Pc. Garlic cloves
  • 150 ml Light soy sauce
  • 2 tbsp Sesame oil
  • 100 ml Sweet Chili Sauce
  • 1 tbsp Sambal Oelek
  • 4 tbsp Lime juice
  • Salt pepper

Instructions
 

  • First, roast the sesame seeds in a non-stick frying pan over medium heat until they start to smell golden brown. Stir again and again. Then place on a plate and let cool down.
  • Grate the carrots finely (you can leave the skin on if you like). Halve the snow peas. Divide the broccoli into florets. Cook the pasta until al dente and drain according to the instructions on the packet.
  • Heat coconut oil in a wok and fry the prepared vegetables with the finely chopped garlic. Add soy sauce, chilli sauce, sambal oil and sesame oil and stir briefly over high heat. Remove the wok from the heat and fold in the noodles. Season to taste with salt, pepper and lime juice. Finally sprinkle the sesame on top. The salad tastes warm and cold. You can also replace half of the sesame with black sesame.
